Ingredients
  

For the Toast

  • 2 slices whole grain or sourdough bread Toasted.
  • 1 ripe avocado Mashed with a pinch of salt.
  • 2 large eggs Poached.
  • salt and black pepper To taste.
  • red pepper flakes or chili oil Optional, for heat.
  • lemon juice Optional, for brightness.

Instructions
 

  • Toast the bread slices until golden and crisp. Set aside.
  • In a small bowl, mash the avocado with a pinch of salt and a squeeze of lemon juice if desired.
  • To poach eggs, fill a small saucepan with about 2 inches of water. Bring to a gentle simmer and add a splash of vinegar (optional).
  • Crack an egg into a small bowl, then gently slide it into the simmering water. Poach for 3–4 minutes or until the white is set but the yolk is still soft. Repeat for second egg.
  • Spread mashed avocado over the toasted bread. Top each slice with a poached egg.
  • Season with salt, black pepper, and optional red pepper flakes or chili oil. Serve immediately.

Notes

Customize with toppings like microgreens, crumbled feta, or everything bagel seasoning. Great with a side of fruit or greens for a full meal.
